Recipes: Oatmeal Two Ways!

Looking to make your heart-healthy oatmeal more exciting? Here are two unique recipes!

“Almond Joy” Oatmeal

Ingredients:
1 cup nonfat milk
½ cup old fashioned oats
Pinch of salt
2 Tbsp. light coconut milk
1 tsp. semisweet/dark chocolate chips
1 tsp. unsweetened coconut shreds
1 Tbsp. chopped almonds, toasted

Directions:
Cook oats in milk with salt until they reach the desired consistency.  Pour into the serving bowl and top with remaining ingredients.

Carrot-Raisin Oatmeal

Ingredients:
1 cup nonfat milk
½ cup old fashioned oats
Pinch of salt
1 Tbsp. raisins
¼ cup freshly grated carrot
2 Tbsp. unsweetened applesauce
¼ tsp. cinnamon
¼ tsp. vanilla
A few fresh grates of ginger
1 tsp. dark brown sugar
1 clementine, peeled and segments separated
1 Tbsp. all natural unsweetened almond butter or 1 Tbsp. chopped almonds

Directions:
Cook oats and raisins in milk with salt until they reach desired consistency.  Add the carrots, applesauce, sugar, and spices.  Spoon into the serving bowl and top with the clementine segments and almond butter/almonds.
